The additions span traditional midway fare, regional comfort foods and trend-driven desserts, expanding an already large dining landscape that includes hundreds of vendors across the grounds.

The new items are spread among multiple zones, including outdoor food-tent corridors and indoor concourse areas, reflecting how the rodeo’s food program is designed to serve both daytime visitors and large evening crowds arriving for rodeo competitions and stadium concerts.

Dubai chocolate appears in multiple desserts as global flavor trends reach the midway

Among the most visible themes in the 2026 rollout is “Dubai chocolate,” a pistachio-forward, chocolate-based flavor profile that has become increasingly prominent in U.S. food launches tied to social-media-driven demand. At the rodeo, the trend shows up in several sweets, including Dubai chocolate funnel cake fries, Dubai chocolate-drenched cookies and a Dubai chocolate strawberry cup. The clustering of similarly themed items suggests vendors are building multiple formats around a single flavor concept to capture broad demand—from handheld cookies to shareable, topped desserts.

Other additions continue the rodeo’s long-running emphasis on maximalist presentation and high-impact textures: deep-fried formats, layered toppings and mashups that blend sweet, salty, crunchy and creamy components.

New restaurants highlight a strategic push into on-site dining experiences

Beyond the midway, the 2026 rodeo will debut two new on-site dining concepts operated by Fertitta Entertainment: 1932 Cattleman’s Club, positioned as a full-service fine-dining venue, and Chute 32, a new quick-service operation near the same area. The concepts broaden the rodeo’s food ecosystem beyond concession stands, with menus that include premium proteins and late-night service intended for post-event traffic.

Menu items promoted for the quick-service concept include wagyu served on a stick, lobster rolls, a specialty hot dog, smoked brisket nachos and a loaded baked potato. The fine-dining venue is designed to offer lunch and dinner service, along with a children’s menu and late-night options.

Texas-forward comfort food and novelty engineering remain central

New savory items reflect a continued focus on Texas barbecue influences and engineered “signature” snacks. Examples include brisket cheese-curd tacos, brisket-stuffed pretzels, bacon jam beignets, and cheese on a stick finished with spicy snack seasoning. Several newcomers also lean into cajun and Gulf Coast cues, including gumbo and sausage-based skewers.
